The purpose of study was to evaluate the effect of 20 grams sugar beet fiber consumption on serum lipid of 29 hypercholestrolemic patients (11 females and 18 males) with mean age of 50.2+5.7 years, were recruited in a 10 weeks crossover study.

The subjects were assigned in to two groups (group I and II with 13 and 16 subjects irrespectively). The trial was performed in two phases (4 weeks each, with a 2 week wash out period). In each phase, 100 gr of one of the two different kinds of bread, ie wheat bread. (W.B) and beet fiber containing bread (B.F.C.B.), was added to the ordinary diets of the participant. Serum triglyceride, Total –HDL and LDL-  C Levels were determined once at the beginning of the study, and then, at 2 WK intervals. The results showed that (B.F.C.B) ingestion caused 8% (P<0.01) and 12.5% (P<0.005) reduction n serum Total-C levels at the end of 2nd and 4th weeks, respectively. The serum LDL-C levels also decreased to 9.4% (P<0.05) and 15.7% (P<0.005) at the end of 2nd and 4th weeks, respectively. The reduction of Total – C / HDL – C ratio were 10.6% (P<0.05) and 17% (P<0.05) at the end of 2nd and 4th weeks respectively. The results indicated that (B.F.C.B) consumption did not have any statistically significant effects on HDL-C and triglyceride levels during the study period. The above indicators did not change significantly in (W.B) – consumption group.
